Calvin, a New Zealand born butcher learned his trade slaughtering and boning steers for the freezer on the North Island family farm.
Cal’s Butchery is a busy place, but Calvin and his wife Sandra make time to prepare gourmet sausages, with Cal designing the flavours and Sandra making the sausages. You can find their tasty snags, which include chicken, tomato and bacon; chicken, cheese and chive; spicy chorizo and the children’s favourite sweet curry sausages, at Cal’s Butchery & Fresh Seafood at Moonee Marketplace.
This shop has a wide range of fresh meat products, all hormone and chemical free, including gluten-free beef sausages, Cal’s famous barbecue ribs, Scotch on the bone and a plethora of ready-to cook meat and chicken meals. Whole, sliced ham & ham bones for cooking also available. Above them on the counter are local free-range eggs, local honey, local organic garlic and a variety of carefully selected accompaniments from sauces, relishes and pickles to verjuice and preserved fruits in wine.
With advance notice, Cal is happy to prepare special orders, including goat meat from Dorrigo and he also offers go-anywhere spit roast catering.
